Mushroom Soup

I got the original recipe here, so check that out.  Here's my version:

2 Tbsp butter
1 spoonful (:P) minced garlic
2 spoonfuls coconut oil
1/2 cup sliced up steak
1/2 sweet onion
3 cups sliced baby bela mushrooms
4 cups beef stock
1 cup coconut milk
1 carrot (diced)
1/2 cup organic heavy whipping cream
a little pepper

Heat the butter and coconut oil on low with the mushrooms and steak (sliced thinly) with the garlic while you prepare the rest of the ingredients.  Once the steak is cooked, throw in the mushrooms and diced carrot.  Let that cook on low until the mushrooms are cooked, then add the beef stock.  Check the ingredients before you buy this! Some of them have a ton of chemicals and sodium.  I managed to find one with all natural ingredients that used honey as the sweetener for just a little more money.  Once the stock has cooked, add in the coconut milk.  I added heavy cream after a taste test to add some richness to the broth, and it's pretty good!  Add pepper to taste.


This isn't my usual cooking style.  I feel like more spices could be added to bring out some more flavor, but by itself, it's still tasty.  Let me know what you think!
